Depends on the destination and the duration of your trip.
Well, as a mother of two, my suggestion would be try to travel as light as possible and only bring the necessary stuff with you:
1. Medicine - it's a MUST!! The basic ones include fever, cold, stomach pain, diarherra and vomit.
2. Baby trolley
3. A handy blanket as the blanket provided by the hotel is usually of adult size
4. A small bath towel if you concern about the hygiene of the towels provided by the hotel. You may get those sports towels (Arena). They are very compact when folded up and quick dry!
5. An inflatable bathing pool (just big enough for your baby to sit inside) You can get one from Toysrus. I think the shower facilities in the hotel may not be situable for baby and I would not use the bathtub for small kids due to hygiene issue.
6. Remember to pack an extra set of clothes in the hand luggage for both you and the baby on the plane if you have check-in luggage. I learnt from my last experience that my kid wet his and my pants on the plane as I carried him on my lap! I had to stay with my wet pants until we check in the hotel!!!!!
7. A few toys (better if they are new!) to keep your baby busy on the plane. Prepare some of his/her favorite snacks in your hand luggage.
8. Water - at least enough for a day's consumption for your baby. Keep some for the next day so that you can mix your water with that provided in the hotel.
9. As your baby is already one year old, you may not need to sterilized the milk bottles as you do at home. But here's a small tip for you to clean the teats/pacifier: Bring a little plastic snack box so that you could soak the teats/pacifier in the boiled water. You can even store the clean teats in the box and place it in the hotel fridge.
10. Sun protection lotion and mosquito repellent if you go to a tropical country
11. A handy/compact umbrella (if it could fit inside your bag) for both sun and rain. Usually umbrellas are available at hotel. You may prepare some disposable raincoats in your bag (can get from supermarket of 7-11). They are very useful!
